You turn on the digital piece find the kind of meat you are going to be cooking and how done you would like it to be then turn on the part with the actual thermometer attached to it

The major flaw is the limitation of setting a temperature beyond the programmed temperatures

Or turn the thing off and occasionally turn it on to check the temperature otherwise the monitor will continuously beep
