Very simple, laid out well in detail, step by step directions of how to disassemble a barnyard or pastured animal. The overall process can be transferred between critters. Used this for a pig roast.

The step by step photos are extremely helpful. Great pics and a must-have. Couldn't be happier.
Very straight and simple explanation of the butchering world. Great resource and learning tool for anyone interested in butchery.
Cons
The pigs is whole rather than split in half which means a lot of flicking through pages to get to the correct stage. Quite a few of the instructions end half way and do not describe what to do next or use unclear instructions.
