This book seems to be the magnum opus manifesto of the sous vide preparation technique.
The french laundry cookbook is a great way to get chefs into sous vide. Costco, and other discount food warehouse, have sales on vacuum sealers and bags at least twice a year. Preheating an immersion circulator before adding water makes it easier.
Will raise your cooking to next level. Very advanced. Started using it right away.
Cons
This cookbook is not for the home cook. Showy, convoluted recipes. It is written for restaurant.
The book is unusable. It has beautiful but utterly intimidating pictures. The weird sadeo * picture on the cover is a super dull fifty shades of great style theme through the entire book.
