It takes so much like regular homemade pancakes that even my husband, who is not on a gluten-free diet, thinks it tastes great. My grandkids are very fussy about their pancakes and they prefer this over the regular pancake mix.

It actually puffs up and reminds me of buttermilk pancakes i used to love at ihop

That said know that it makes just ok waffles they taste good but king arthurs gluten free baking mix makes for a much better waffle but not as good pancakes as trader joes
