I use veggie broth whenever water or other types of broth are in the recipe. Creamy mushroom curry with brown basmati rice pilaf is great.

Kathy hester's book is vegan, with oil free, and other dietary options. Hester has a way with food, she just knows how to put flavors and textures together.

Cons

Easy recipes are not to be found in this book, by and large. The author seriously just gets vegetables tops them on each other with limited seasoning.
