Pros

Frickin' awesome. Great book in depth and breadth. All books by culinarily institute of america are exceptional!

This book is written by the culinary institute of america, the premier cooking school in the usa. It's easy to convert the quantities and most of the techniques are similar enough that it shouldn't be a problem even for the home cook.

The recipes are for restaurants or catering, unless you are having a big dinner party. For those troubled or handicapped with recipes for large numbers, there is this thing called math, which helps in scaling down portions.



Cons

My gripe is i spent $80 for it as an app about 4 years ago. One huge gash on front cover (hardcover) with a few scratches else where.

If you are looking for something unique, of medium complexity, and high quality, this is a good buy.

    The content of the book is great, but it seems as with many other buyers, i received a used copy u def the guise and price of buying a new copy.

    There is obvious wear on the books pages and cover, the book came unsealed with creases in pages and worn spots on the edges.

    If i knew i was not going to get a perfect conditioned book i would have saved 30-40$ and bought a used copy from the start.
