The lentil quinoa bolognese sauce is one of my favorites. I prefer it without onion and add more cucumber. Vaquero bean tempeh chili is the best bean chili i have encountered.
Simple enough for newbie vegans to follow and creative enough for seasoned vegans. Author also has an oat cookbook that is just as phenomenal, but is a tad more expensive now.
Cons
The sauce called for 1 can (28oz) of diced tomatoes, which are then seasoned. Tasted a bit bland to me. Also hard to get smooth because of the beans.
