Pros
Sue becker is a living encyclopedia of great information and i recommend this book. This book is very informative about different flours. Well done sue and thank you for the excellent book.
Cons
None of the recipes are in grams which is the most accurate. Very brief description on types of mills and grain itself. The fabulous french bread is fabulously flavorless.

This means you cannot weigh the ingredients to get a precise repeatable recipe

You have to use measuring cupsspoons and measure by volume only which means your end product will vary slightly every single time

If you are new to baking learning to weigh out your ingredients is the best skill you can learn but youd need the recipe book to tell you what each ingredient weighs first
