Great dough recipes and instructions for making and experimenting with different styles and toppings, etc. The tart flambée recipe is a good starting point. Some good details and ingredient references are found.
His book is a must have for anyone tired of purchasing lackluster pies from their hometown. Living in the south, finding a good pizzeria is next to impossible so making it at home is essential. Pizza history is a bonus in this book.
