The contents are well-ordered and the recipes doable. I also like the binding and craftsmanship of the book. The recipes are loose, but if you read the opening chapters you will not need absolute precision.
This book literally spans the world! All different cultures and flavors. The recipes are outstanding! The use of these, plus a lot of white pepper, is what makes it authentic.
Cons
The illustrations are few and the directions are poor. Disappointed there was not many pictures.

Mr peterson includes alternate finishes as well as ideas on what to do with the leftovers
3 proteins were listed as options along with the tofu we used the chicken but its nice to have a choice
I have been reading some of the other reviews and i am somewhat amazed

But after reading the first 2 chapters of the book and perusing through the recepies this book changed my life

I do like the recipes in the book but more often his techniques are being applied to other recipes vastly improved by my new ability to make a good stock
