While most reviewers say its either really hard or impossible to release the latch with a knife or similar object i can say with certainty that it is in fact possible but the catch is that it practically ruins the teeth on the ratchet if youre not precise

Unlike cords or rope that can be untied or worn through or duct tape that can be easily defeated search youtube for videos on how to do that once these handcuffs are put on theres no way the restrained individual can remove them
