Pros
A little pricey, but still love them. Love these (bought 3 of them) for my layer cakes. Also see they have some really cool muffin tin ones. Every silpat™ mat and mould proudly bears the made in france stamp.
It's just issue of trust for health we were unwilling to risk. Great for the price. Works like magic.
Cons
Silpat mats are good, but i am not sure i will keep this because it is not accurate in size. It is made in china, according to the packaging. Gently removed the mat from the bottomsof the baked cake layers.

Completely went away after switching to silpat
We noticed there were other brands at less cost and decided on the original silpats brand
You can find cheaper versions but i personally prefer the real french silpats
