Pros

Shun 6 in classic chef is a gorgeous knife. I use it mostly when trimming raw meat and it slides right through. This 6 chef is very handy for smaller tasks, plus would be great for trimming meat [not boning or cutting through joints].

Kept the shun knife and use it often with great satisfaction. I love how durable, easy to clean, and comfortable to use they are. It rocks nicely with veggies.

The knife is light and well balanced and feels good to hold. Both knives fit well in hand and were of a comfortable weight. It's beautiful, sharp, and particularly well balanced for my smaller hands.

    I ended up taking it to a knife shop to have it sharpened and they were able to save it but it is now an inch shorter and doesnt feel as balanced in my hand

    I did go back and sharpened my cheapo calphalon kantana knives from 20 years ago with a water stone just to compare
