Pros
Stoneground is my flour of choice as it is healthier. I like spelt flour to use in baking when it is humid. It was conveniently shipped to me and on time as well.
Cons
There is no ''rise' in the starter which means that any fermentation properties of the flour do not exist or have been stripped away in the milling process. I am equally unimpressed when adding it to my sourdough ingredients.

Since it is so expensive to make it last longer i used half spelt and half gluten free flour in the recipes so as to make this flour last longer
