Each recipe is for at least two loaves so working your way through this book is a great way to make friends! This is one of the greatest books on sour dough i have read. My favorite is the underrated pain au levain which produces zero waste/discard. T...  Read More

The recipes are virtually impossible for the home baker. All the recipes contain white flour!

Some bread masochists think difficulty is necessary to produce good bread. Try peter reinhart's the bread baker's apprentice and for rye and bagels, try ginsberg and berg's inside the jewish bakery. Ours was burnt bread and not even good. The author i...  Read More

Her starter recipe is cumbersome it involves a tremendous amount of flour and a rigorous feeding schedule

Posted by a reviewer on Amazon

But hey i wasnt going anywhere and frankly still havent

Posted by a reviewer on Amazon

I followed her strict feeding schedule for the start for the first month or so and then changed it to a once a day feeding

Posted by a reviewer on Amazon

She doesnt explicitly say that this is a bad idea but she does concede that not everyone can feed a sourdough starter three times a day

Posted by a reviewer on Amazon

I also decided to only maintain a quarter of what she says i will admit that the amount she suggests keeping is outrageous and frankly produces too much waste

Posted by a reviewer on Amazon

But i follow all her directions just with a quarter of the flour

Posted by a reviewer on Amazon

I just turned my disasters into bread crumbs croutons or bread pudding

Posted by a reviewer on Amazon

She doesnt buy into flowery writing she doesnt give long winded descriptions of how most customers dont like whole wheat but they only like her whole wheat and she doesnt pretend like her way is the only way
