Her starter recipe is cumbersome it involves a tremendous amount of flour and a rigorous feeding schedule

I followed her strict feeding schedule for the start for the first month or so and then changed it to a once a day feeding

She doesnt explicitly say that this is a bad idea but she does concede that not everyone can feed a sourdough starter three times a day

I also decided to only maintain a quarter of what she says i will admit that the amount she suggests keeping is outrageous and frankly produces too much waste
