Pros
You really need to learn to use a sharpening stone with this knife. When the knife is properly sharpened on very fine japanese waterstones, it takes an incredible screaming sharp edge.
It simply glides through veges and meat effortlessly. Slices through a raw carrot like it was steamed. Holds an edge forever, great for chopping vegetables.
Even with incorrect care, this knife is worth every penny! The price is a reflection of the superb quality and ongoing pleaure of use that this knife will give, year after year.
Cons
I cook for a living and this knife has been a nightmare from day one. Why on earth it has a 30/70 bevel is beyond me. The paperwork that is shipped with it is japanese.

Dont use this for bones and similar cutting jobs that is a job for a different type of knife and get this professionally sharpened
