Many ive found either the recommended or alternates some ive had to come up with alternates based on the descriptions of the cheeses in the book and the rest im going to have to look the cheeses up online to find an alternate because the book didnt have particularly helpful descriptions

My only reason for 4 stars rather than 5 is because many of the cheeses are very hard to find of course this is due to my geographic location im sure others will have better luck
