Pros
The matfer bourgeat is a heavier pan, but still much lighter than cast iron. It's as useful as my cast-iron skillet, but this weighs a lot less. They get more and more non-stick with use.
It's thick enough that i haven't seen any warping or deflection. This also compliments my cast iron and stainless steel cookware. Outstanding at searing, but also work perfectly to cook eggs and crepes on.
The outer diameter on that unit is huge. My stovetop is typical size.
Heavier pans take longer to heat evenly, but sear better than lighter ones, which are more nimble to use. Matfer is caving in to the electric burner crowd and will be adding a slight convex hump to the bottom of their pans in q4 of 2022.
The quality of the pan is top notch. It is well priced for its quality.
Cons

I originally had stainless steel allclad frying pans that would stick and become discolored
You also have to dry it off bc itll rust but were already use to that using cast iron pans as our primary

When the pan first arrived theres a black squarish spot inside the pan where the handle is welded

The way i could tell the outer coating was removed was that i cleaned the inside evenly until i just saw gray and 3 darker weld spots
