    Maybe it just takes practice, but with the instructions i followed, it seemed like the pasta was too dry and would break so that i couldn't run it through the third press or make it thinner.

    So 7 years later i received the kitchenaid gourmet pasta press attachment: it is like a dough mill that feeds the dough into a tube then presses the dough through a dial you have chosen for pasta.

    The other thing if the mixer is set too low, your dough will stick to the blades when it's cutting, it makes a terrible mess of what should be pretty noodles.
