Pros & Cons
Pros
The kai pro chef’s knife is a good addition to your kitchen cutlery. I really wish it came with a blade guard or sheath. I have kai scissors that are the bomb.
The blade stock is a little thicker than i hoped for. The grind on the blade looks excellent. And it's sharper now. The blade is very sharp & sturdy.
The steel is softer than most japanese stainless. The balance on it feels very nice, perfect for a pinch grip.
Both items are a great value and compare with their high end counterparts. Reasonably sharp and well balanced.
Cons
This has a thicker cutting edge than i'm used to and gave too much resistance when rock-chopping (how i typically chop vegetables) looks nice, but would not recommend. Doesn't hold an edge well, easily scratched and chipped.
Highlights
Quality
Compared with my other expensive branded knives and this one has a reasonable price but the quality is not compromised
I was surprised by the quality of the fit and finish of this knife
I would trust the quality more if it was made in japan
Price
Given the price good very good
Again given the price it seems quite good
Packaging/appearance
Its too wide for my knife block so im storing it in the packaging in a drawer
Competitiveness
Last black friday i bought a set of wusthof classic knives on sale and theyve basically ruined me as far as knives go i really like them
Im a chef of 20 years and a knife collector

I would like a more grippy handle personally because i handle a lot of slippery food and my gloved hands get wet when processing making the handle a little slippery for my gloves
