It is less gritty than regular whole wheat pasta. I am gluten sensitive and yet this pasta has no bad side effects.

This pasta starts out at only 35 gm of carb as opposed to 42 for most white flour pasta and 38 gm for barilla plus has 4 gm of fiber as opposed to 2 for most white flour pasta and 9 gm of protein as opposed to 7 for most white flour pasta and 10 for barilla plus

Net carbs are 40 for most white flour pasta 34 for barilla plus but only 31 for einkorn pasta
