Pros
When no one is watching, i sneak nibble after nibble just on its own. The flavor is more complex and interesting than creamy blues i can get in my local supermarket. It goes extremely well with nuts and wine.
Saint aguirre blue cheese is absolutely amazing. This is more like a hybrid of triple cream extra fine brie and blue cheese. It's mild, creamy but has that distinct blue cheese taste.
Cons
I had a sample of this cheese today, it is very creamy, maybe to much for my taste. I prefer an harsh bite like danish blue or stilton, with a low cream content.
