Instructions on how to make poached eggs are right there on page 56. This cookbook is so different from any other one i've seen. No more canned soups for my family!
The photos are especially helpful for the novice cook. No condescending language. Very good for a real beginner.
I am so thankful somebody took the time to break down the basics in this book. Since home econ is not being taught in high school & parents are not teaching their kids to cook, this book fills a void.

The kindle edition is not user friendly at all. Don't confuse basic with beginner.
Save your money and get another cookbook instead - america's test kitchen series or wiley's the professional chef are good alternatives. It is a pain to navigate between recipes and when you click on a recipe, it jumps to that recipe (good) the flavor... Read More

And this is coming from someone who once messed up basic chocolate chip cookies i melted the chocolate chips into the hot butter and started a fire in the microwave when heating up a piece of bread no i still have no idea what i did wrong

I suspect because marks recipes are for the home cook what was missing was a glob of msg and possibly some other exotic mushrooms
