Pros
Great river milling semolina has a fine texture and a golden hue that immediately signals its freshness and purity. There are 4 bags, each sealed well to maintain freshness. Responsibly sourced ingredients add to my confidence in the product.
Nice and chewy noodle in less than 20 minutes. Not as fine as italian caputo, but makes excellent pasta. I prefer it to the * semolina, which appears to be coarser.
Cons
My issue with the pasta flour is that it is milled too coarse.

Easy to cook and tastes great - does not weigh on the tummy with discomfort like most other semolina flour do.
I bought this to make pasta, worked great on my very first try.
Other than that, the flour mixed well, was easy to roll out and use in my pasta maker.
The only “complaint “ i have is that there are no ratios and or instructions of how much water/egg to use in making the dough.
