Pros

This is the book i'd recommend to beginners. Contents of the book are detailed and does a great job of explaining things. The gift receiver uses this book alot.

Choose your own baking destiny. Ingredients are simple! Each recipe describes the product, gives quantities by weight and volume, and step by step instructions with a timeline.

Ken forkish's method for mixing, folding, proofing, and baking breads is quite simple. His youtube channel takes you through each step in each recipe. His methods for folding and mixing and all of it just work.

I love this book and the way it teaches you to bake breads. This book is my go-to for sourdough and pizza dough. Good book, takes you through the different ways to ferment or make dough for bread.



Cons

Not well adapted to home baking. The recipe for the bread that he produces at his bakery is not in this book -- “for obvious reasons,” he states.

Half of the book is an ego-driven memoir of the author. The author is clearly a want-to-be-frenchman. My money was totally wasted.
