Pros

The edge pro apex holds the blade in place while it is being sharpened. One complaint is that holding the blade while sharpening can be challenging.

The edge pro apex is a fantastic system. The repeatable quality of the edge cannot be overstated. Made in the center of the knife oregon. Now the patent has run out there are copies of the apex for sale.

Wet stones without a * are best used to prop a door open. After the bevel is coarse cut on both sides you switch to a finer grit stone – like the 400 - using the same method to complete the sharpening process.

Once you get the little learning curve down and a nice method, it's easy. Your knives will slice through a tomato sideways, without having to hold said tomato. Takes a little practice, but even a novice can get great results!



Cons

The tip portion of the blade is difficult to sharpen. As the angles change, due to movement, there is unevenness of sharpening across the bevel. Most fillet knives flex which adds another level of issues.

There's a knock off model from china for $35 that does have these features. To keep this direct, the geometry of the system is wrong. An error on one side isn't translated to the other side. The edge pro apex is not actually a professional anything.

I would suggest a digital angle finder as my knives did not match up with the marks on the pivot rod

Easy to use right out of the box


I use to use the spyderco sharpmaker and it did a pretty good job


I bought it at a different vendor so i could get the shapton glass stones with it

Competitiveness


Works great easy to use and knives are sharper than they’ve ever been including when they were new


Oh and i have a wide selection of shapton pro bench stones i use with a jig to sharpen woodworking edge tools


Its no longer a great value at that price compared to the competition


That was only going as far as a shapton pro 4000 stone which sharpenspolishes like maybe a 6000 chosera or similar japanese water stone
