Its not necessarily instant but i didnt assume it would be it takes a few seconds once in the meat to give a reading but you can watch the temp on the display change as its reading

At first i thought this thermometer was cheap quality and would break after the first use

My only complaint is that there isnt a release button for the probe you kind of have to pinch it open or use something to pull it out

Ive owned another digital thermometers in this design that would turn off after 5 or 6 seconds so there was no way for me to monitor temps rising or falling
