Pros
These dexter russel knives are all a great value, i own several. They make the most nsf and sanitary knives in the business. All my dexter sani safe knives are industry standard.
Dexter is the best for this work. In southbridge, massachusetts since the early 1800s. Def does the job! Used it for the first time today. It is a bit chipped so i use it on the farm and the new one is in the kitchen.
Cons
Maybe i am just unlucky and received a knife that was sharpened by someone's first day on the job. But the edge on this blade is a hack job.

It’s decently sharp and for 20 whatever dollars a pretty good buy
I read a lot of reviews and was prepared to spend 100 for a good quality knife
After all the research i decided to risk going with an inexpensive blade
The grip isn’t the best for me sort of short but overall a decent knife for the price and what i use it for

Out of the box it sliced paper
Came sharp as a scalpel but it did have a slight imperfection at the top of the blade

My old set of chicago cutlery mixed with rada cold steel old hickory and old timer cant hold an edge through skinning which is why i have a ton of knives sharpened and laid out on the table when i process meat
