Pros

My knives are over 20 yrs old so to get them useable again says a lot for this unit. Just as advertised.

L'angle de 20 degrés est parfaitement visible et net sur la lame and donne un tranchant impeccable. Le chef'schoice 120 s'est avéré très efficace. Facile à utiliser.

The 120 model has 3 stages. And stage 3 is the final strop at a different bevel again.



Cons

It no longer sharpens well even after several passes. It is no longer sharper after a single pass.

I think its fair to say it does a much better job on straight flat knives over serrated blades but overall im very happy with the purchase


This unit enables me to sharpen my knives far better than anything else i’ve used i am very happy with it


The first one failed after a fall to the floor and i replaced it with the exact same model


Ive tried diamondstudded steels but i wasnt fully satisfied

    The closest part of the blade to the handle of the knife is hard to reach

    When i was young steels from solingen germany were my favourite but they dont work very well with the latest alloys
