However it takes too long to heat up on the stove burner compared to electric it pours pretty fast so you dont get much advantage of a more delicate pour than with the electric kettle and you have to be watching it to get the temperature just right

Essentially yes you want the water to be within the range indicated on the thermometer however if you pour from boiling it will in fact be in this range once its in the pourover vessel
