Pros
This book has everything you need to start making smoked sausage except for the *. Tuscan sausage without anchovy is wonderful. There is even a duck and bacon sausage recipe, which we will try once hubby gets enough ducks to make a batch.
Really enjoyed this book throughly. Well, it's not fiction, but it's so readable and interesting! Very good. My sincere thanks to bruce and recommendation to future readers.
Adding sausage making to my skill set is very enjoyable. Great detail and insight to the process and the necessary cautions that would be easily overlooked. Good info for any sausage making rookie.
Cons
Lacking in curing and other important aspects of making real sausage. More of a cookbook on sausage. Barely mentions about cured sausages.
