I believe bourdain's personality exists in both the tommy and the chef characters. Kitchen confidential is a chef's confidential report.
The language is a tad rough for the genteel set, but perfect for the story. His characters are believable and 3 dimensional.
Benevolent protagonists get caught up in mafia meat heads jockeying for position. Fans of no reservations or a cook's tour will easily recognize the macabre humor.
I was mesmerized by this book. While it's not the story i would have given to my sunday school teacher as a child, it is a story i'd have shared with my drill instructor. I'da buy 'nother your good book.
Tommy is the sous-chef at the dreadnought restaurant. Uncle sal is a second tier mobster. Other characters are a chef dealing with a * problem and a sous chef trying to leave the mob life.
Cons
