Pros
It has a mild earthy flavor, and takes on seasoning well. Easy to use and awesome for thicker sauces like chili or spaghetti. Can use with ground beef as an extender as well.
It rehydrates well, has sufficient mouth feel of meat. Fantastic fiber/protein balance with no cholesterol. It's sort of like the crunchy bits on the bottom of the pork rinds bag, but vegan, lol.
Tvp is the best, great tate. I'm single and just find it quicker and easier to use tvp than brown a whole lb.

I mix the tvp with ground beef 8020 as a 50 to 60 ratio of tvp to beef

But i also use tvp granules dry in a little dish sprinkled lightly with bbq flavored salt from the dollar store as a snack

A baking tip if i am going to use it to make something like chili or any other groundup type textured but liquid dish i shorten the water called for its mix by about a tsp to a tbl

After that sets i fry it up by itself or with some chopped onion peppers spices and what have you in a splash of oil until medwell browned or to the crunch desired
