I ordered this 12inch carbon steel wok with helper handle flat bottom from the wok shop on amazon even though it would have been slightly cheaper from the featured vendor

Once dry i added fat to the wok then 1 bunch green onions along with some ¼ inch sliced ginger and fried them till charred

The recipe helped but without a good wok the breath of the wok is impossible to easily achieve

Dried the bottom then put it back on the flame and wiped dry with half a sheet of paper towel

I put some oil in the wok heat it on high till smoke rose put the steak in seared a minute or so turned over and did the same
