The flat profile gives this knife an ability to be sharpened very easily. Comes with a whetstone/waterstone to achieve even higher levels of absurdity. And it is easy to sharpen.

Vg-10 is an excellent steel when done right. Unlike shun, the heat treatment on tojiro'svg-10 yields a good performing knife and is not chippy like shuns often are. Nicely clad in stainless.

The knife is very dull which surprised me as the ootb (out of the box) sharpness gets great reviews. The cutting edge is not flat, there are inconsistencies there that are not good and point to poor manufacturing/qc. All i can say is; what a disappoin... Read More

Ive had this for about 4 months and it has only needed honing on a steel
It is simply not stout enough though to cut through a big apple or cut into something that’s fibrous or dense

Short of a 300 takeda this is my favorite parer
At 50 for a parer i wouldnt consider this a budget knife but an overall good value

Came in an attractive enough box that we have been just storing it in the box in our knife drawer

In have paring knives of a few sizes that can do everything you expect and also cut through tough stuff but most are not great for really delicate work

The knife even comes with a little pamphlet that warns you not to power your way through if the knife seems stuck…

Not that though the accompanying pamphlet warns you to dry the knife as though it were made of high carbon steel to avoid rust and pitting
