Pros

Always had the dream of owning copper cookware. Makes me feel like a professional chef. I like to make candy and copper is the choice of candy makers.

This frying pan is awesome! Beautiful fry pan. It seems to be very, very well made.

The copper conducts heat evenly up through the sides of the pan. It distributes the heat well. Heat distributes evenly and cleans up easily.

Magnetic stainless steel (preferably 5 ply) is the best. Perfectly brushed stainless, completely even heat distribution, flawless glaze on the cast iron handle. All clad is still secure in that it won't be replaced by this stuff anytime soon.

It's does clean up nicely if you keep oiled. There's a little trick i learned for cleaning up the interiors of pans that works amazing for burned on gunk. That seasoning makes the cooking surface signi-ficantly less sticky.



Cons

Both of these pans have significant discoloration after just one use. In the falk pot the food never sticks to the pot.

I finally settled on the mauviel panand am extremely pleased with it for all the usual reasons youread in other reviews


5 inch round frying pan cast iron handle to replace a nonstick skillet of similar size as i am moving away from nonstick coatings

I heated to boiling in each pan 8 ounces of tap water over thesame burner set at high heat


I use carbon steel more now from mauviel for that reason

    Before you put your food into the pan rub a thin layer of peanut oil it really needs to be peanut oil so that it wont burn with a paper towel on the inside of the pan just enough to lightly cover the steel

    Heat the pan up to medium heat and allow the peanut oil to season to the pan
