It has plastic pieces on the underside of the rolling parts that scrape off any bits of dough that get stuck

There are also numbers on the knob for your convenience but all you need to do is set on the maximum which will stop on 8 to start and gradually work your way down to 1 which is where it will also not go further

I then rolled each assembly and held a clean white washcloth over rollers in the reverse as to not draw into machine to make sure there was not any adherences left

Great little noodle maker but bits of noodle dough does get stuck in the noodle cutter parts which sucks to clean
