There are plenty of pizza dough basics and principles explained here. Great dough recipes make great pizzas in your conventional oven.
Great read. Superb book. Not kidding. Outstanding book. This book is excellent!
Ken explains the difference between room temp and controlled temp ferments. Also explains how to use different types of 00 flour. Great dough recipes and instructions for making and experimenting.
Ken is very skilled at explaining things in simple ways. You have to commit to the work and the time and the method the author requires. The guy is a genius.
Cons
With the glut of pizza ovens, this book needs an update to keep up with the times. Every dough recipe is for a home oven - there are no conversions for, or even mention of, home ovens. Not overcooked burnt crust because there's nothing on top to cook ... Read More
