Without a cooling rack were forced to use a plate or a cutting board which means your beautifully cooked meat will end up resting in a pool of its own tepid juices which will destroy the nice caramelized outer coating turning it into a slimy wet mess

The little wire strands actually act like velcro to the bacon meat holding it in place during the cooking process resulting in a flat uniform slice thats not all curly and withered
