    Yes you may hear often that serious cooks simply must own a carbon steel knife which is harder than stainless steel and thus retains edges for a longer time but again theyre quite a bit more expensive like easily 68 times more expensive and also require a bit more care as they tend to be more fragile yes despite being harder steel get rust spots and are more difficult to hone
