    Yes, you may hear often that serious cooks simply *must* own a carbon steel knife, which is harder than stainless steel and thus retains edges for a longer time, but again, they're quite a bit more expensive (like, easily 6-8 times more expensive), and also require a bit more care as they tend to be more fragile (yes, despite being harder steel), get rust spots, and are more difficult to hone.
