Pros
Apollonia's sourdough starter uses live culture yogurt to quickly get you baking. The bread is one of the best i have ever made. Duplicating would entail opening a bakery dedicated to sourdough baking.
Bake the basic loaf many times. It is really geared for professional and serious home bakers. The author makes you feel like you can bake a decent loaf with just a few days commitment.
Cons
The cookbook has beautiful photos, but recipes that seem inauthentic. The actual recipes are not only few but lack all the alchemy description/secrets i'd expected.
In retrospect, there was warning. It feels like this book was published to primarily capitalize on the fame of the poilane name. Agree with anna's review & most of the negative reviews.
There are few bread recipes and the instructions are poor.

You can smell the bread baking and hear the freshly baked crust crackle no as the loaves cool

So get a dutch oven build her starter and create the most sumptuous loaf you have ever sunk your teeth into

I understand for many adding yeast will help but for those of us with sourdough starters it would have been nice to at least have some notes for these wonderful recipes without added yeast

I agree with those reviewers who point out that although the recipes are not authentic they are nonetheless useful for the beginning baker like myself who wants to learn how to make sourdough but does not have a month to let a starter mature
