Very traditional santoku profile making it easy to chop with a rocking motion as the blade and handle are in the same plane rather than an uplifted handle i have no notion as to the softness or hardness of the stainless steel as this is something that only time and a history of sharpening will determine but for the moment its certainly as hard or as soft as the rachel rayfuri offerings which i suspect are average
