Pros

With lots of entraining humor, this book is more about science than recipes. It has info on how to cook pretty much anything and everything. My engineer soul is pleased.

Goldwyn also debunks many bbq myths. This is the best bbq/grill/smoke cookbook i have seen. A contrarian view on some of the standard thinking on cooking meat with fire.

The gg grates definitely work better than the bge ci grates. If you just bought a bge or are just new to grilling, this is a good place to start.

Easy to read, well researched. Readable fonts. there’s even pictures and illustrations. Overall very impressed.



Cons

Although the physical book has both table of contents and an index, the kindle version has neither. Hopefully this major oversight will be remedied.
