I read an article once that said buying a block of knives was a waste of time as you generally used the same two or three all the time, and that it was worth spending money on just those two or three knives. When I looked at my old cheap set of knives, I realised that this was true and set out to get some good knives about four years ago. I originally found the Kai Shun range in a small shop in Belgium, and despite the investment price, decided to buy some. I have not regretted that decision for one moment. These knives are so sharp that they should come with a warning (ask me how I know...). I am no chef, but my knife skills have improved dramatically using these super sharp knives. Like the previous poster indicated, these are not sharpened in the usual European way, so I use a Kai sharpener. Not only do they do the job, but the 32 layers of damask steel are beautiful to look at; mine are hung on a wooden magnetic block within easy reach. They are well balanced, and to my particular delight are perfect for left handers as well as right. I cannot recommend these knives highly enough.
