These knives have a very polished smooth edge. I use a ceramic steel and they have kept their edge very well for what must be 8-10 years now. Gifted, no complaints there either.

What a shame that such an expensive knife it arrives in a cardboard box

The problem is the amount of steal they remove from the blade the blade will start to concave and wont slice cleanly when using a board
