For those complaining about the edge not holding long they are either using plastic or glass cutting boards or pressing too hard on their strokes

The chef should be sliced and the santoku should be lightly chopped

And because we through tons of dinner parties invariably the knives get a few runs threw the dishwasher and they seem to survive no problem
