    So, if i heat it up over my gas stove, the center will be at 320°f (as measured by my infrared thermometer), while the edges will be at 250°f.

    Heat transfer is not so great; fried chicken was crispy but not that deep golden crunch you get from contact with cast-iron; but not the soggy mess that teflon makes either.

    The only problem i had with it was that the bottom seemed to get a bit off balance when it got warm but when cooled, it flattened out.
