While im using it the battery percentage really fluctuates but it will settle out when the bike isnt moving

This doesnt seem to be a problem the motor seems to have no problem with the gearing

I live in an area with moderate hills and so far have left the bike in top gear with a little finesse on the throttle at startup word on the interwebs is that its possible to blow the scrs if too much power is applied at low speed the motor really wants rpms
