I heated to boiling in each pan 8 ounces of tap water over thesame burner set at high heat
I am looking to add more mauviel products to collection
I use carbon steel more now from mauviel for that reason

If you turn the burner down not 3 seconds later the pan cools down if you turn it up not 3 seconds later you here your food cooking away again

My theory is that when the food is in place the heat in copper has a place to go the hood is a heat sink

Let the copper get a patina otherwise your are going to spend a lot of time polishing for no good reason

For boiling water ill turn it up to high just until the water starts to boil then ill dial it back almost immediately as the boiling starts to begin

With a gas or standard electric range the heat is transferred from the flame or heat of the range to the bottom of the pan

So the source of the heat is the pan itself not exactly the heating element under the pan

Once the oil starts to burn that is when it starts creating that sticky gunky film on the bottom of your pan that can be awful to remove if you dont know how to remove it properly

Youre also supposed to get the pan hot before adding the oil although ive heard arguments that this isnt necessarily 100 true
